Serves 10 people

To make the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Premix (produces 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Method

For the Syrup: Put all the components in a pan, heat until it reaches a gentle boil, stirring to dissolve. After that, take off the stove allowing it to cool down entirely. Transfer into an sealable bottle, cap it keeping it in the fridge, it will last for up to one month.

Preparing the Batch Mix: Combine all the liquid ingredients in a sizeable container, allow it to infuse for an hour, then filter it , ideally through muslin, so it's fully clarified.

For serving: Pour 85ml of the batch mix into your mixing glass packed with ice, and agitate carefully for one minute until cold. Filter to a cold coupe glass or equivalent, top with the cranberries and complete it with a brief mist of mandarin oil over the top.
